It’s like we’ve moved straight into a full-on local food adventure.And speaking of Hitoyoshi City… it has to be ayu simmered in sweet soy sauce.Gifu’s version was delicious too, but I think I like the Hitoyoshi style better.Himari:I think I prefer the flavors from Gifu…For example, Gifu’s simmered ayu really highlights the natural aroma of the fish,while Hitoyoshi’s feels like a bold sweet-and-savory flavor explosion.When you compare them side by side, they’re completely different.Komari:That’s the real joy of moving or traveling—discovering the food.Even when there are worries, just thinking about food makes my heart flutter.After all, it’s entertainment you can experience with all five senses!Himari:So everyone reading Secret Communication,please remember to enjoy the food in your everyday life too!

Himari:Komari-chan, today is Sagichō—after the people in their unlucky years finish throwing mochi, we grill the New Year decorations and toast mochi over the fire.…You did bring your mochi bag, right?Komari:Hehehe… as if I’d ever forget that.I brought a big bag today. This thing could hold a hundred pieces easily.Himari and I have even been practicing dodging and picking up mochi ahead of time. I’m totally fired up for this.Himari:Yes. The mochi flies at an incredible speed, so we have to dodge both the mochi and the adults while picking up the ones that hit the ground.…By the way, they say you lightly roast the yakumochi over the fire from the New Year decorations, and everyone eats the mochi after the bad luck has been burned away.Komari:Yeah… it feels really blessed.Gifu sure has a lot of delicious festivals, doesn’t it?Someday, I want to be the one throwing the mochi, too.

Komari：Today is Setsubun, you know!It’s the day we scatter roasted soybeans toward the demon gate to pray for good health.And the beans we throw… fufufufufu.Himari：Today, we’re making three‑color beans, right?In a small pot, we add plenty of sugar, salt, and water, simmer it until it thickens,then turn off the heat and stir in the roasted beans… That’s correct, isn’t it?Komari：Yep, that’s pretty much it.Once the syrup coating them turns white and hardens,we add color using tea and powdered dried ume-shiso,and there you have it—three‑color beans!Those three colors come from the yin‑yang five‑elements theory,and they’re meant to bring good fortune. Heh‑heh!Himari：We studied that together, didn’t we!Komari：W-wahhh, you shouldn’t say that part out loud!

Komari：Today is Pickles Day, you know! There are all kinds of pickles,but right now I’m really craving narazuke—the kind made by soaking gourd or cucumber in sake lees.Himari：…Narazuke! The sake lees around it are delicious too.I use sake lees for cooking—like marinating meat or spreading it on fish before grilling.Komari：As for me, I just love scooping those sake lees from narazukeand dumping them straight onto my rice! Eating a little bit of the lees every day,and finally enjoying the narazuke at the end… what bliss!Himari：Dumping it… on rice…?Well then, let’s go buy some narazuke!I heard that in Gifu, they make something similar called Moriguchi-zuke.Komari：What?! Then we can go buy it right away!I was just about to start packing for a trip, you know!
